Château Le Pape

Constructed by master sailmaker Pierre Bobineau in 1805, the charming Château Le Pape has a rich history and heritage of its own, home to many artists and painters over the past two centuries. Robert G. Wilmers purchased Le Pape in 2012 for the quality of the vineyard, the elegance of the architecture and for its sublime, secluded location. 2015 marked the completion of a significant renovation of the chateau, its guestrooms and gardens and the beginning of a new chapter in luxury hospitality.

An exquisite setting alive with history and culture

The gardens of Château Le Pape, designed by landscape artist Camille Muller, offer a serene setting, a source of relaxation and inspiration.

Visitors are invited to rest, relax and unwind on the shaded terrace or in the heated outdoor swimming pool overlooking the vines, but also to explore and learn about this historic region and its wines. Cycle through an expanse of vines and ancient woodland, or visit Haut-Bailly's cellars and winery to discover the art of fine winemaking.

The Private Table of Haut-Bailly has become a landmark for those in search of the finest pairings of wines and seasonal cuisine. Set within the 19th century chateau, menus are conceived using regional produce sourced from local markets and paired with the wines of Château Haut-Bailly. The intimacy of the setting (for groups of 4 to 15 persons), the friendly attentiveness of the staff and the creative cuisine of chef Maxime Pommier make for bespoke occasions unlike any other.

The chef, Maxime Pommier

There is a clear parallel between the art of a fine chef and that of a great winemaker. Each relies upon the finest ingredients available, combining and manipulating them with skill, respect and vision to arrive at an end result that is more than the sum of its parts.

Each day, our chef challenges himself to think beyond his own craft and to draw inspiration from the widest possible sources. For him, the best ideas can come from anywhere, at any time. The challenge is to channel abstract concepts, originality and meaning into his food.

Born in La Rochelle, Maxime Pommier began his career on the Atlantic coast, where he learned to prepare fish. Passionate about haute gastronomy, he returned to study and continued his apprenticeship at the Hotel de Paris in Monaco, before rising to renowned starred restaurants: the Burgundy in Paris and Garopapilles in Bordeaux.
Maxime joined Haut-Bailly in September 2021. He offers a cuisine that favours local products, both classic and innovative, in line with the spirit of the estate. The combinations he creates and the pairings bring an extra dimension to the wines of Haut-Bailly.

Château Haut-Bailly

Château Haut-Bailly is known to take pleasure and pride in extending the warmest welcome to all visitors, whether wine enthusiasts or curious tourists. Since 1998, major investments have made it possible to offer high-quality services in keeping with the elegance of the wines. Visitors are invited to discover the artisanal craft of winemaking, take in the view over the vineyard, and indulge in the pleasures of fine French dining. The 19th Century chateau and reception hall provide a warm, intimate setting for special events.

Tours and tastings

The Château Haut-Bailly tour invites visitors to go backstage to discover the secrets of Grand Cru Classé wine and the Graves terroir. It concludes in the charming boutique with a tasting of wines from the estate. Several formats are proposed: a classic visit (75 min - 50€/pers), a gourmet visit (75 min - 60€/pers), a privileged 'Collector’s visit' (90 min - 80€/pers) or a simple tasting (20 min, 20€/pers).

Large-scale receptions

The reception hall, set in the estate’s former barrel room, opens onto the chateau courtyard, featuring an iconic sculpture by Bernar Venet. It can accommodate lunches and dinners from 20 to 130 people. Guests will be enchanted by this serene setting, its harmonious architecture and elegant atmosphere.

Working seminars

The conference room, bathed in natural light, enjoys a superb view over the vineyards and a beautiful outdoor patio. It seats up to 60 guests, offering a calm, studious environment for seminars, master classes, and workshops. The facility is fully equipped with a screen, video projector, sound system and WiFi.

Hand-crafted chocolates

In true Haut-Bailly spirit, a collaboration with luxury chocolate boutique La Chocolaterie Saunion has given rise to a signature chocolate. These chocolates embody a real devotion to the art of hospitality and uncompromising standards, and can be tasted exclusively by Haut-Bailly visitors.
